Ingredients For tarragon chicken

6boneless skinless chicken thighs

olive oil

1 Tbspbutter

2 cchicken stock

2 Tbsptomato paste

4shallots chopped

3 clovegarlic minced

1/2 cdry white wine

1/3 cheavy cream

2 Tbspfresh tarragon minced
How To Make tarragon chicken

1Season the chicken with salt and pepper. Place oil in a heavy skillet. Add the chicken brown on both sides about 4 minutes. Remove chicken and set aside.

2Add the butter, shallots and garlic. Saute until shallots are golden. Add the white wine and cook until most has evaporated. Add the chicken stock, and tomato paste. Place the chicken back into pan and simmer until chicken is done. Remove chicken and stir in cream. Add the tarragon. Bring to a boil taste and adjust seasoning and serve over chicken
