Ingredients For sweet & tangy chicken thighs

2/3 cwater

1/4 cdijon mustard

3 Tbspapricot preserves

1 Tbsplow sodium tamari or braggs aminos

1 Tbspscallions, finely chopped

4 - 6boneless skinless chicken thighs (can sub 4 boneless skinless breasts)
How To Make sweet & tangy chicken thighs

1Using a large non-stick skillet, combine water, mustard, preserves, tamari and chopped scallions.

2Add chicken to skillet and saute over medium-high heat and then reduce heat. Simmer for approximately 15 minutes or until chicken is cooked through and is tender. ***Add additional water, if needed, if sauce becomes too thick.

3Serve with rice or couscous.
