My mother-in-law introduced this recipe to us. We love it! Next time I think I'll try with fresh finely chopped ginger.

Ingredients For sweet-sour chicken

8chicken tenderloins or 4 chicken breasts

1/2 cflour

1 tspsalt

1/3 csalad oil or shortening

1/4 tsppepper

1 cansliced pineapple, drain & save syrup

2 Tbspcornstarch

3/4 ccide vinegar

1/4 tspginger

1 Tbspsoy sauce

1 csugar

1 Tbspsoy sauce

1chicken bouilion cube

1bell pepper, sliced
How To Make sweet-sour chicken

1Coat chicken with flour. Brown in hot oil. Arrange skin side up in shallow roasting pan. Sprinkle with salt & pepper.

2Prepare sauce. Add water to pineapple syrup to make 1 1/4 cup. Combine syrup, sugar, constarch, vinegar, soy sauce, ginger & bouillion cube

3Bring to boil, stirring constantly 2 minutes. Pour over chicken. Bake uncovered, 30 min. Add pineapple and 1 bell pepper, sliced. Bake 30 min longer.
