sweet orange hot curry chicken

This was last nights dinner. We had it with honeyed rice. I think the sweetness of the rice goes well with the heat of the curry. I'm including the rice recipe also.

Ingredients For sweet orange hot curry chicken

2 boneless, skinless chicken breasts

1 small onion, halved and thinly sliced

1 tablespoon unsalted butter

1 tablespoon oil for frying

1 teaspoon fresh squeezed lemon juice

1 cup sweet orange marmalade
-
3 large roasted garlic cloves
-
1 tablespoon ginger
-
½ teaspoon turmeric
-
4 tablespoons curry powder “ or to taste”

1 teaspoon ground coriander
-
1 teaspoon kosher or sea salt
-
1 tablespoon fresh ground pepper
-
6 ounces frozen green peas defrosted “optional “

4 cups unsweetened coconut milk

rice:
-
3 cups of rice
-
1 & ½ tablespoon honey
-
1 teaspoon turmeric
-
1 teaspoon kosher or sea salt
How To Make sweet orange hot curry chicken

1Cut the chicken into bite size pieces.

2Slice the onion into thin slices.

3Fry the chicken and onions in some oil with butter with the curry and black pepper till the chicken is slightly browned.

4This does not need to be fully cooked at this point because it will continue to cook in the milk mixture.

5Mix the coconut milk, lemon juice, marmalade, garlic, ginger, turmeric, coriander, salt in a bowl.

6Add the milk mixture to the chicken and cook for at least 30 minutes or until the chicken is completely cooked.

7As the chicken cooks the sauce will thicken.

8If you are adding the frozen peas, turn off the curry and add the peas, cover and keep it covered till the peas are hot.

9TO MAKE THE RICE:

10To the water, add the honey and turmeric and Cook according to package directions, drain.
