super lemon chicken and pasta

I pinched this recipe from SandyJJ and decided to make a few personalized changes. My 7 year old grand-daughter Jordan came up with the name, and it really IS super!

Ingredients For super lemon chicken and pasta

  • CHICKEN PREP:
  • 1 1/2 lb
    chicken breasts
  • pinch
    salt and pepper
  • 1/2 Tbsp
    butter
  • 1 1/2 tsp
    lemon zest, grated
  • SAUCE:
  • 1 stick
    butter, melted
  • 1 c
    white wine (i use pinot grigio)
  • 1 1/4 tsp
    minced garlic (i use dried)
  • 1/2 c
    lemon juice
  • 1/3 c
    olive oil
  • 1/2 tsp
    rosemary, dried
  • pinch
    salt and pepper
  • 1/4 c
    fresh parsley chopped
  • 16 oz
    thin spaghetti
  • parmesan cheese

How To Make super lemon chicken and pasta

    Mix all sauce ingredients except parsley in a pan. Simmer on low for about 20 minutes. The last 5 minutes add the chopped parsley and stir.

    Cook pasta according to package directions.

    While sauce is simmering start chicken prep. Add the 1/2 tablespoon of butter to fry pan. Add chicken at a medium temperature. Grate the lemon over the chicken pieces and sprinkle a touch of salt and pepper. I have used chicken cutlets and also chicken tenders. Both work well. Cook for about 6 minutes on both sides till slightly browned.

    After chicken is browned turn the heat up a smidge and pour a 1/2 cup of the sauce over the chicken and give it just a few minutes. I actually let my chicken cook with in the sauce for about 25 minutes last night and it was yummy and tender!

    Drain pasta and pour the sauce over and toss the pasta thoroughly. Lay the chicken on the pasta, sprinkle Parmesan to taste and enjoy! I made this last night and it was gorgeous! My biggest problem is remembering to take a pic of the meal before digging in. Hope to take that picture soon!
