Had some left over chicken and just threw this together. It came out yummy, so I thought I would share.

Ingredients For stuffed tomato
-
4-6 ozcooked and cooled boneless chicken breast, loosely diced
-
1/2 mdred onion
-
1/8-1/4 tspcayenne pepper, powdered

salt and pepper, to taste

1/4 cmayonnaise, light
-
1-2 Tbspdijon mustard
-
1 lgtomato, top cut off and hollowed out
-
lettuce leaves, (if desired)
How To Make stuffed tomato

1Place chicken and onion in the bowl of a food processor. Blend until finely ground.

2Mix in cayenne, salt & pepper, mayo and dijon.

3Spoon mixture into hollowed out tomato. Place on bed of lettuce (if desired).

4(There will most likely be some mixture left over; would make a good sandwich on a small wheat pita).
