Had some left over chicken and just threw this together. It came out yummy, so I thought I would share.

Ingredients For stuffed tomato

  • 4-6 oz
    cooked and cooled boneless chicken breast, loosely diced
  • 1/2 md
    red onion
  • 1/8-1/4 tsp
    cayenne pepper, powdered
  • salt and pepper, to taste
  • 1/4 c
    mayonnaise, light
  • 1-2 Tbsp
    dijon mustard
  • 1 lg
    tomato, top cut off and hollowed out
  • lettuce leaves, (if desired)

How To Make stuffed tomato

  • 1
    Place chicken and onion in the bowl of a food processor. Blend until finely ground.
  • 2
    Mix in cayenne, salt & pepper, mayo and dijon.

    Spoon mixture into hollowed out tomato. Place on bed of lettuce (if desired).
  • 4
    (There will most likely be some mixture left over; would make a good sandwich on a small wheat pita).
