This is a great new take on Chicken Parmesan. It's delicious and filling! It has a creamy cheesy spinach stuffing. You can top it with your favorite sauce and add mozzarella to finish it off. Great served with roasted potatoes, garlic mashed potatoes, or some kind of pasta.

Not another ordinary Chicken Parmesan recipe here. This is a cross between stuffed chicken breast and Chicken Parmesan. The super creamy stuffing is spinach mixed with cream cheese, mozzarella cheese, and Parmesan. Once baked, the cracker and cheese coating is crunchy without the mess of frying. A tasty twist on Chicken Parmesan. When the chicken is baking, heat your favorite sauce and prepare the pasta of your choice. Serve alongside some garlic bread, too, for a fantastic family meal.

Ingredients For stuffed chicken parmesan

  • SPINACH CHEESE STUFFING
  • 4 oz
    cream cheese
  • 10 oz
    frozen chopped spinach, thawed, well drained
  • 1 c
    mozzarella cheese, shredded
  • 6 Tbsp
    Parmesan cheese, freshly grated
  • CHICKEN
  • 6
    boneless skinless chicken breasts, pounded to 1/4-inch thickness
  • BREADING
  • 2
    eggs
  • 20
    Ritz crackers, finely crushed
  • 4 Tbsp
    Parmesan cheese, freshly grated
  • TOPPING
  • 1 jar
    your favorite pasta sauce
  • 1/2 c
    mozzarella cheese, shredded

How To Make stuffed chicken parmesan

  • Preheating the oven.

    Heat oven to 375ºF.
  • Cream cheese, spinach, mozzarella, and Parmesan combined in a bowl.

    Mix cream cheese, spinach, mozzarella, and Parmesan until well blended.
  • Spinach mixture on top of the chicken breast.

    Spread onto chicken breasts. Starting at one short end of each breast, roll up the chicken tightly. Secure with wooden toothpicks, if desired.
  • Egg in one dish; remaining Parmesan and cracker crumbs in another dish.

    Beat egg in a shallow dish. Mix remaining Parmesan and cracker crumbs in a separate shallow dish.
  • Dipping chicken breast in egg.

    Dip chicken in egg, then roll in crumb mixture to evenly coat.
  • Coated chicken on a baking sheet.

    Place, seam-sides down, in a 13x9-inch baking dish sprayed with cooking spray.
  • Baking stuffed chicken in the oven.

    Bake 30 minutes or until chicken is done.
  • Chicken topped with spaghetti sauce and mozzarella.

    Remove and discard toothpicks, if using. Serve chicken topped with spaghetti sauce and mozzarella.
