This is a great new take on Chicken Parmesan. It's delicious and filling! It has a creamy cheesy spinach stuffing. You can top it with your favorite sauce and add mozzarella to finish it off. Great served with roasted potatoes, garlic mashed potatoes, or some kind of pasta.

Not another ordinary Chicken Parmesan recipe here. This is a cross between stuffed chicken breast and Chicken Parmesan. The super creamy stuffing is spinach mixed with cream cheese, mozzarella cheese, and Parmesan. Once baked, the cracker and cheese coating is crunchy without the mess of frying. A tasty twist on Chicken Parmesan. When the chicken is baking, heat your favorite sauce and prepare the pasta of your choice. Serve alongside some garlic bread, too, for a fantastic family meal.

- SPINACH CHEESE STUFFING

4 ozcream cheese

10 ozfrozen chopped spinach, thawed, well drained

1 cmozzarella cheese, shredded

6 TbspParmesan cheese, freshly grated
- CHICKEN

6boneless skinless chicken breasts, pounded to 1/4-inch thickness
- BREADING

2eggs
-
20Ritz crackers, finely crushed

4 TbspParmesan cheese, freshly grated
- TOPPING

1 jaryour favorite pasta sauce

1/2 cmozzarella cheese, shredded
How To Make stuffed chicken parmesan

1Heat oven to 375ºF.

2Mix cream cheese, spinach, mozzarella, and Parmesan until well blended.

3Spread onto chicken breasts. Starting at one short end of each breast, roll up the chicken tightly. Secure with wooden toothpicks, if desired.

4Beat egg in a shallow dish. Mix remaining Parmesan and cracker crumbs in a separate shallow dish.

5Dip chicken in egg, then roll in crumb mixture to evenly coat.

6Place, seam-sides down, in a 13x9-inch baking dish sprayed with cooking spray.

7Bake 30 minutes or until chicken is done.

8Remove and discard toothpicks, if using. Serve chicken topped with spaghetti sauce and mozzarella.
