Ingredients For stovetop chicken and mushroom fajitas

1 tspground cumin

1 tspdried oregano

3/4 tspsalt

1/8 tspcayenne pepper

3/4 lbboneless, skinless chicken breasts, cut into 2 x 1/2 " strips

2 Tbspolive oil, divided

1 lgonion, thinly sliced

1/2 lbfresh baby bella mushrooms, sliced

1/4 csour cream (lowfat if preferred)

1 tsppickled jalapenos, chopped

4low-calorie/low fat flour tortillas

2green onions, thinly sliced
How To Make stovetop chicken and mushroom fajitas

1Combine spices with 1/2 teaspoon salt in a bowl and add the chicken, tossing to coat. Set chicken aside.

2Heat 1 tbsp. oil in a skillet over medium-high heat. Add the onion and cook until softened. Add the mushrooms and remaining salt. Cook, stirring occasionally, until softened. Transfer onions and mushrooms to a plate.

3Add second tbsp. of oil in the same skillet over medium-high heat. Add the chicken and cook until browned and cooked through completely.

4Return the onion mixture to the chicken and heat through.

5Combine the sour cream with the pickled jalapenos. Warm tortillas in the oven or microwave. Place about 1 cup of chicken mixture on the tortilla and garnish with sour cream and scallions. Feel free to add cheese, cilantro, or your choice of topping.
