I love this recipe, because I can make it with whatever meat I happen to have. It is a wonderful way to use up leftovers.

Ingredients For stir-fry

3 cmeat (you can use steak, roast, beef, chicken, shrimp etc)

3 Tbspbutter

20 ozcanned pineapple, drained (save liquid)

2 Tbspsoy sauce
-
1 Tbspsugar
-
1/4 tspsalt
-
2 Tbspcornstarch
-
3 cvegetable blend or oriental vegetable mix

5 chot cooked rice
-
1 Tbspvinegar
-
2 Tbspwater, to mix with cornstarch
How To Make stir-fry

1Melt butter in skillet over medium heat. Add meat and stir occasionally for 4 minutes.

2Add enough water to the pineapple syrup to measure 2 1/4 cups water. Stir pineapple liquid, vinegar, soy sauce, sugar and salt to skillet and simmer 5 minutes.

3Mix cornstarch with a little water. Gradually stir into meat mixture, stirring constantly, until mixture becomes thick and bubbly.

4Stir in pineapples and vegetables. Cook about 3 minutes. Serve over hot rice.
