8 ozrice noodles

4 Tbspfish sauce

3 Tbspbrown sugar

1 Tbsplime juice

2 Tbspoil

4 clovegarlic minced

2boneless chicken thighs cut into bite size pieces

8raw shrimp peeled and deveined

2 lgeggs beaten
-
1 cshredded carrots
-
1 cbean sprouts
-
1/4 cpickled mustard greens chopped

3scallions chopped
-
1/4 ccrushed roasted peanuts
-
fresh cilantro, hoisin sauce and lime wedges for serving
How To Make stir fried rice noodles with chicken & shrimp

1Cook the noodles in boiling water. Drain rinse with hot water and set aside. Mix the fish sauce, brown sugar and lime juice together and set aside. In a skillet add 1 tbsp oil. Add the beaten egg and let the bottom set then fold it over itself into a log. Set on cutting board to cool.

2Heat oil in a Wok or large skillet. Add the garlic and stir fry for 30 seconds. Add the chicken and stir fry until no longer pink. Add the shrimp and stir fry 3 minutes.

3Add the carrots, noodles and fish sauce mixture. Cook until most of the liquid is absorbed. Add the scallions and bean sprouts and stir fry 30 seconds.

4Serve topped with crushed nuts, fresh cilantro a drizzle of hoisin sauce, and lime wedges.
