My mom made several variations of this meatloaf recipe while we were growing up to make sure we got our veggies in for the day. Now we make it with ground turkey for a lighter meal.

Ingredients For spinach and tomato meatloaf

2 lbground chuck (for healthier dish use ground chicken or turkey)

1 canfire roasted tomatoes, diced

8 ozcanned tomato sauce

2 lgeggs
-
3/4 citalian bread crumbs

3/4 pkgfrozen spinach (using frozen spinach will add moisture to the dish)

1/2 cbarbecue sauce

1/2 cparmesan cheese
How To Make spinach and tomato meatloaf

1In a large mixing bowl add ground beef and eggs. Stir until eggs are beaten.

2Add remaining ingredients and mix well. Salt and pepper to taste.

3Place mixture in a greased meatloaf pan and bake for 1 hour at 375 degrees.

4Drain excess grease before serving. Ready to serve!
