Finding tasty foods while trying to eat healthy is important to me! It doesn't have to lack in flavor to be healthy. This is my take on Szechuan Chicken. This was spicy, slightly crunchy and very tasty. Hope you enjoy!

Ingredients For spicy szechaun stir-fry

1 lbchicken breast, cut into bite size pieces

4 Tbspcooking oil
-
1 tspred pepper flakes
-
2 tspginger powder
-
2 tspgarlic, minced
-
1 ccarrots, cut into thin strips
-
1 cbroccoli florets
-
1 lgbell pepper, julienne
-
1 mdonion, julienne
-
1/4 tspcayenne pepper
-
2 Tbspsoy sauce, light
-
1/4 crice wine, cooking sherry or cooking wine
-
salt to taste, optional
-
toasted sesame seed
-
cooked rice
How To Make spicy szechaun stir-fry

1Rinse chicken and pat dry with paper towels; cut into bite size pieces. Set aside.

2Prepare vegetables; set aside.

3Heat a large Wok over a high heat until hot; add 2 tablespoons of the oil. Add pepper flakes, ginger and garlic; stir fry for 1 minute.

4Add carrots and stir fry for 1 minute and then add remaining vegetables and sprinkle with cayenne; stir fry of 1 minute.

5Add chicken, soy sauce,wine and salt if desired; stir fry until chicken is cooked and the vegetables are cooked but al dente (about 5 minutes).

6Serve over rice; sprinkle with toasted sesame seed.
