I made this with turkey kielbasa to make it healthier, but you can use regular, smoked kielbasa.

Ingredients For spicy mardi gras stew

  • 1 lb
    boneless, skinless chicken breasts, cut into 1"-chunks
  • 1 lb
    smoked turkey kielbasa, cut into 1"-slices
  • 1/2 lb
    medium shrrimp, peeled, deveined
  • 1
    28 oz can crushed tomatoeas, undrained
  • 1-3/4 c
    chicken broth
  • 1 c
    uncooked whole grain rice
  • 1/2 c
    chicken broth
  • 1 lg
    green bell pepper, chopped
  • 1 lg
    red bell pepper, chopped
  • 1 lg
    onion, chopped
  • 4 tsp
    cajun seasoning
  • 1 tsp
    garlic powder

How To Make spicy mardi gras stew

    In lg soup pot, over medium heat. combine all ingredients, mix well.

    Cover, cook for 15 mins. Reduce heat to low. Simmer 35 min more, or until rice is fully cooked.

    Ladle into bowls and enjoy w/ some crusty French bread!
