I made these one day when I wanted chicken fingers, but I didn't want to eat anything fried. So I made these w/ cajun seasoning, which gives them a nice kick. I serve them with either fat-free ranch or blue cheese dressing.

Ingredients For spicy baked chicken fingers

  • 4
    chicken breasts, cut into finger-sized pieces
  • 1/4 c
    flour
  • 1-1/2 tsp
    garlic powder
  • 1-1/2 tsp
    cajun seasoning
  • 1/4 tsp
    salt and pepper each
  • 3/4 c
    plain bread crumbs
  • 2
    egg whites
  • 1 Tbsp
    water

How To Make spicy baked chicken fingers

    Heat oven to 400. Spray a baking sheet w/ cooking spray. In a plastic, resealable bg, mix together flour, 1/2 tsp garlic powder, 1/2 tsp cajun seasoning, salt and pepper. In a shallow bowl, mix bread crumbs w/ remaining garlic powder and cajun seasoning. In another shallow bowl, beat egg whites w/ water. Place chicken pieces into plastic bag, shake to coat. Dip chicken pieces into egg mix, then roll in crumb mix to coat. Place chicken on baking sheet, bake 8 min. Turn chicken over and bake another 8 mins.
