Ingredients For spiced coconut grilled chicken

  • 2 lb
    boneless chicken breast (cut in 1inch squares)
  • 1 lb
    thinly sliced bacon
  • 1 c
    coconut milk
  • 1 tsp
    salt (or to best suit your taste)
  • 1 tsp
    black pepper
  • 1 Tbsp
    basil paste or fresh basil (chopped)
  • 1/2 tsp
    boullion
  • 1 Tbsp
    dill, fresh (chopped)
  • 1 Tbsp
    ginger
  • 1 Tbsp
    onion

How To Make spiced coconut grilled chicken

  • 1
    Blend all ginger, onion, bouillon, basil paste, black pepper and salt together with coconut milk and set aside.

    Wrap chicken with bacon and skew with a wooden skewer or metal skewer if you decide to grill on open fire.

    Dredge the chicken in the coconut mixture and allow to soak the juices for about 30 minutes.

    Grill for about 20 minutes in 380 degrees oven or on your grill. FYI, charcoal grill adds an awesome flavor to this.

    Garnish with chopped dill.
