This is one of my favorite dishes to make. Yields a lot and only gets better with time. Feel free to experiment with different add ins!

Ingredients For spanish chicken

2 Tbspextra virgin olive oil
-
4chicken breasts, roughly chopped

4cloves of garlic
-
1bay leaf
-
1onion, sliced
-
1 cwhite wine, dry
-
1 sm jarpimentos
-
1handful of golden raisins
-
1 cchicken stock
-
2 Tbspbutter
How To Make spanish chicken

1Combine in a nonstick pan the olive oil, garlic, onion and chicken. Cook until onions are soft and chicken is cooked through.

2Chop olives add to pan with pimentos and raisins. Cook just a few minutes before moving to next step.

3Add white wine and bay leaf. Allow to simmer until liquid reduces to about half. Stir in butter and plate over rice once butter is incorporated!
