Ingredients For soy sauce chicken

  • 4 lb
    whole chicken
  • 1 c
    soy sauce
  • 1 c
    dark soy sauce
  • 1 c
    shaoxing wine or dry sherry
  • 3/4 c
    brown sugar
  • 1 Tbsp
    fennel seeds
  • 3
    whole star anise
  • 1 Tbsp
    roasted szechuan peppercorns.
  • 1
    thick slice ginger peeled
  • 10 clove
    garlic sliced
  • 1 stick
    cinnamon
  • 4 c
    water
  • cilantro for garnish

How To Make soy sauce chicken

  • 1
    Place all ingredients except chicken and cilantro in a large pot. Bring it to a boil.

    Rinse the chicken in cool water and pat dry. Place the chicken in the boiling liquid breast side down. Reduce heat to a simmer.

    Cover the pan and vent it a bit. Simmer the chicken for 1 hour turning every 15 minutes. Remove the chicken from the liquid. Place chicken on a carving board. Strain the liquid and discard any solids. Place the liquid in a pan and bring to a boil. Reduce the liquid for 15 minutes. Serve with the chicken Garnish the chicken with cilantro.
