Ingredients For soy sauce chicken

4 lbwhole chicken

1 csoy sauce

1 cdark soy sauce

1 cshaoxing wine or dry sherry

3/4 cbrown sugar

1 Tbspfennel seeds

3whole star anise

1 Tbsproasted szechuan peppercorns.

1thick slice ginger peeled

10 clovegarlic sliced

1 stickcinnamon

How To Make soy sauce chicken

1Place all ingredients except chicken and cilantro in a large pot. Bring it to a boil.

2Rinse the chicken in cool water and pat dry. Place the chicken in the boiling liquid breast side down. Reduce heat to a simmer.

3Cover the pan and vent it a bit. Simmer the chicken for 1 hour turning every 15 minutes. Remove the chicken from the liquid. Place chicken on a carving board. Strain the liquid and discard any solids. Place the liquid in a pan and bring to a boil. Reduce the liquid for 15 minutes. Serve with the chicken Garnish the chicken with cilantro.
