southwestern roasted chicken w/ sweet potatoes

A lovely southwestern-style chicken and the sweet potatoes are a wonderful accompaniment. I like to sprinkle the sweet potatoes with ancho chile powder and cinnamon (along with the salt) before roasting.

Ingredients For southwestern roasted chicken w/ sweet potatoes

    lime
  • 1 Tbsp
    ancho chile powder
  • 1 Tbsp
    paprika
  • 1 Tbsp
    dried oregano
  • 2 clove
    garlic, minced
  • 1 tsp
    salt

    3 1/2 pound roasting chicken
  • 3 md
    medium-large sweet potatoes, peeled and quartered lengthwise
  • ancho chile powder, cinnamon to your liking - this is for the sweet potatoes)
  • olive oil

How To Make southwestern roasted chicken w/ sweet potatoes

    Preheat oven to 375 degrees. In a roasting pan, place a rack and spray both the rack and pan with vegetable spray.

    Grate the zest of the lime and cut lime in half. Squeeze 1/2 lime and place lime halves aside for later use. Combine zest, juice, chile powder, paprika, oregano, garlic and 1/2 tsp. salt in a bowl and stir until it forms a paste.

    Loosen the skin from the chicken breast and legs and rub the paste under the skin and remainder on top. Place lime halves inside the gavity of the chicken. Tuck wings under and tie legs together. Place breast-side up on the rack in the roasting pan.

    Roast chicken on the middle rack of an oven and roast for approx. 70 minutes or until thermometer measures 180 degrees.

    After chicken has roasted for 30 minutes, place sweet potatoes in a baking dish and toss them with olive oil, ancho chile powder, cinnamon and remaining salt. Place potatoes on lower rack and roast for approx. 40 minutes or until tender.

    Remove chicken from oven and let stand 10 minutes. Discard lime and serve chicken pieces along with sweet potatoes.
