Ingredients For southwest chicken chili

  • 1/3 c
    corn oil
  • 1 lg
    onion, chopped
  • 2 clove
    garlic, minced
  • 1
    red bell pepper, diced
  • 2 - 3 tsp
    chili powder
  • 2 tsp
    cumin
  • 2 can
    (15 oz. each) cannellini beans, rinsed and drained
  • 1 c
    frozen corn, thawed
  • 2 can
    (14 oz. each) chicken broth
  • 2 can
    (4 oz. each) chopped mild green chilies
  • 4 - 5 c
    cooked chicken cut into 1/2" pieces
  • salt and pepper to taste

How To Make southwest chicken chili

  • 1
    Heat oil in large heavy pot over medium heat. Add onion, garlic, red bell pepper and spices. Saute 5 minutes. Add beans, corn, chicken broth, green chilies and chicken. Bring mixture to a boil and then simmer, stirring occasionally, 15 - 20 minutes. Season to taste with salt and pepper

    Ladle into bowls and garnish with shredded Monterey Jack cheese.
