Ingredients For southwest chicken chili

1/3 ccorn oil

1 lgonion, chopped

2 clovegarlic, minced

1red bell pepper, diced
-
2 - 3 tspchili powder
-
2 tspcumin
-
2 can(15 oz. each) cannellini beans, rinsed and drained

1 cfrozen corn, thawed
-
2 can(14 oz. each) chicken broth
-
2 can(4 oz. each) chopped mild green chilies
-
4 - 5 ccooked chicken cut into 1/2" pieces

salt and pepper to taste
How To Make southwest chicken chili

1Heat oil in large heavy pot over medium heat. Add onion, garlic, red bell pepper and spices. Saute 5 minutes. Add beans, corn, chicken broth, green chilies and chicken. Bring mixture to a boil and then simmer, stirring occasionally, 15 - 20 minutes. Season to taste with salt and pepper

2Ladle into bowls and garnish with shredded Monterey Jack cheese.
