Ingredients For southern oven fried chicken

4 oz6 skinless bone-in chicken breast

2 lgeggs
-
1/4 cnon fat or soy milk
-
1/2 cfinely chopped pecans

1/3 ccornmeal
-
1/3 cwhole wheat, oat or soy flour

1 tspsalt
-
1 tsponion powder
-
1/2 tspcayenne pepper
-
1/2 tspfresh ground pepper
-
1 Tbspsmart balance buttery spread, slivered into thin slices
How To Make southern oven fried chicken

1Preheat oven to 425 with the rack in the center. Line a 9x13 inch deep baking dish with heavy aluminum foil.

2In a wide bowl whisk the eggs and milk.

3In a shallow bowl, stir together the pecans, cornmeal, flour, salt, onion powder, cayenne, and pepper.

4Rinse chicken under cold water and pat dry with a paper towel. Dip the chicken breast into the egg mixture and then dredge them in the pecan mixture.

5Place the chicken in the baking dish. Dot each coated breast with the Smart Balance and bake until golden brown...approximately 40 minutes

6For a complete meal add mashed potatoes and broccoli.
