Got this recipe from my husband's aunt. It is absolutely delicious and everyone I have ever made it for thinks it is also! It goes great with Salsa of your choice on top when you serve it as a garnish if so desired.

Ingredients For sour cream chicken enchiladas

  • 2 can
    chicken chunked or 2 chicken breast cooked and shredded
  • 1 pkg
    sour cream
  • 1 pkg
    cream cheese, softened
  • 1 bunch
    green onion, chopped
  • 2 can
    green chiles, diced or frozen green chiles
  • 2 can
    cream of chicken soup
  • 2 c
    shredded cheddar cheese
  • 1 pkg
    12 corn tortillas

How To Make sour cream chicken enchiladas

    Cook chicken if using chicken breasts & shred. In Lg bowl mix chicken, green onion, sour cream, cream cheese, cream of chicken soup, green chiles and 1 cup of shredded cheese all together.

    Spray bottom of 13x9 pan with cooking spray, Layer first mixture then on top of that use 6 corn tortillas, then chicken mixture, then other 6 corn tortillas, ending with rest of chicken mixture. Sprinkle rest of cheese on top.

    Put a layer of foil on top of the pan loosely. Bake in oven at 375 for 45 mins.
