Slow Cooker recipes are awesome. You put your cooker on, go to work and come home to your supper already done. Love it! Anything in the Slow Cooker is alright by me. So I try to make as many of these dishes as possible. This Jerk Chicken is so good, it just melts in your mouth.

Ingredients For slow jerk

3 mdsweet potatoes, peeled and cut in cubes

1 cansliced water chestnuts, drained

1 cdried cranberries
-
1/2 cdried cherries
-
1 canpineapple tidbits, unsweetened

2 lbchicken breast halves, skinned removed, bone in

1 tspcinnamon
-
2 Tbspcaribbean jerk seasoning

1/4 cminced onion
-
2 Tbspminced fresh gingeroot

2 Tbspworcestershire sauce
-
1 Tbspgrated lime peel
-
1 tspcumin seeds, crushed

3fresh thyme sprigs
-
1fresh lime
How To Make slow jerk

1Place potatoes in a 4-5 qt. Slow cooker. Add water chestnuts,cranberries, and cherries. Drain pineapple and reserve juice. Add the drained pineapple.

2Rub Chicken breasts with cinnamon & jerk. Put Chicken on top of fruit & potato mixture.

3In a mixing bowl add reserved pineapple juice, onion, ginger,Worcestershire sauce, lime peel, crushed cumin seeds. Pour over chicken and top with fresh thyme sprigs.

4Just before serving cook rice flavor of your choice. Serve with rice and squeeze the juice of a lemon over chicken. Enjoy
