I love Enchiladas but i hate all the mess and several ingredients. So I made a couple change to a dish from Schwan's...This is a must try for all those that want the Mexican Favor but not all the preparation.. A note: you can make this vegetarian , just by omitting the meat , and use sot sour cream, soy cheese. And add veggies of your choice..

Ingredients For slow cooker turkey or chicken and corn enchadilla

1 can10.75 oz cream of chicken soup or veg consomme

1 can10 oz red enchilada sauce
-
8 ozsour cream or soy cream
-
1 canchopped green chilies
-
1/2 cdiced chicken breast or turkey or (veggies of your choice)

2 cmexican style sweet corn
-
12corn tortilla, cut into quarters
-
2 cmexican blend shredded cheese or soy cheese
-
1/4 csliced green onion
How To Make slow cooker turkey or chicken and corn enchadilla

1Stir together the soup , sour cream and green chilies.

2Fold chicken and corn into the soup and sour cream mixture.

3Pour half a can of enchiladas sauce on bottom of a med slow cooker , arrange half of the cut tortilla pieces over sauce.

4Spread half of chicken mixture over cut tortilla and enchilada sauce and top with half cheese.

5Repeat layer, starting with remaining sauce and tortillas.

6Cook on low for 4-6 hours.
