This is great and so easy to make. The recipe recommends "coarsely ground" chicken and I agree - it makes a HUGE difference over regular ground chicken.

Ingredients For slow cooker chicken chili

2 lbground chicken, coarsely ground preferred

3 Tbspchili powder, plus 2 teaspoons

1 can(15 oz) kidney beans, drained and rinsed

2 can(28 oz) diced fire roasted tomatoes

1 mdpotato, peeled and shredded

2 Tbspsoy sauce
-
1 Tbspkosher salt
-
1 Tbsponion powder
-
2 tspgarlic powder
-
1 tspdried oregano
-
1 tspground cumin
-
3/4 clager-style beer (optional)

toppings: sour cream, shredded cheese, chopped scallions, chopped jalapenos
How To Make slow cooker chicken chili

1Put the chicken in the slow cooker. Add 3 tablespoons of the chili powder and all the rest of the ingredients, except for the beer. Stir everything together, cover, and cook on LOW 6-8 hours.

2Just before serving, stir in the remaining 2 teaspoons chili powder, the beer, and season with more salt and pepper, if desired. Divide the chili among warm bowls. Serve with toppings of your choice.

3*TIP* - Stirring the 2 teaspoons of chili powder in right before serving brightens the flavor of the chili.
