Ingredients For slow cooker chicken cacciatore

2 1/2 lbboneless, skinless chicken thighs

1 tspground himalayan sea salt, or to taste

1 tspfreshly ground black pepper, or to taste (i always use mixed peppercorns)

2 Tbspolive oil
-
2 cwhite onions, chopped
-
1 cred peppers, chopped
-
1 cpoblano peppers, chopped (substitute green peppers)
-
6 lgcloves garlic, pressed
-
12 ozbutton mushrooms, washed and sliced
-
1 1/2 croma tomatoes, seeded and cubed
-
1 Tbspitalian seasoning
-
1 tspdried rosemary
-
1 tspdried thyme leaves
-
1 tspred pepper flakes
-
1 lgbay leaf
-
2 c(16 oz.) tomato purée
-
1 1/2 c(12 oz.) marinara sauce
-
1/2 clow-sodium chicken broth
-
1/2 cdry red wine
-
1 Tbspbalsamic vinegar
-
1/2 cblack olives, pitted
-
1 Tbspcornstarch (mixed with 1/2 cup cold water)
How To Make slow cooker chicken cacciatore

1Season thighs generously on both sides with salt and pepper; set aside.

2In a large skillet over medium-high heat, add oil and when it gets hot, add chicken thighs, fat side down. Cook chicken for 5 minutes per side or until browned.

3Meanwhile, add onions, red peppers, green peppers and garlic to the crock pot; stir well. Place browned thighs on top before adding mushrooms and Roma tomatoes; add seasonings.

4Pour in tomato purée, marinara sauce, chicken broth, red wine, and balsamic vinegar; gently spread to cover all the ingredients.

5Close the lid and set the timer for 6 hours on LOW.

6When time is up, add black olives and stir well to combine. Set the timer on HIGH for an additional 30 minutes.

7When the cooking time is done, add the cornstarch mixture, stir until the sauce thickens, about 30 to 45 seconds. Keep warm until ready to serve.
