Ingredients For slow cooked chicken in wine & warm spices

3 lbchicken, cut in serving pieces

2 Tbspbutter

2 Tbspolive oil

1 conion, chopped

1 cdiced tomatoes, canned

4 Tbsptomato paste

1/4 Tbspdry red wine (not cooking wine)

1 clovegarlic, crushed

1/4 tspallspice

1/2 tspcinnamon

1/4 cchicken broth
How To Make slow cooked chicken in wine & warm spices

1Using a heavy bottomed skillet or cast iron skillet, heat butter and olive oil. Brown chicken until golden all over; then remove from pan.

2Reserving 1 tbsp. of the oil/butter mixture, saute onion until golden; then add the tomatoes, tomato paste, wine, garlic, spices and broth. Stir to incorporate the ingredients and bring to a simmer.

3Add the chicken back to the skillet and turn heat to low; cover and simmer for approx. 30 minutes. Uncover chicken and simmer for another 30 minutes.
