Ingredients For slow cooked chicken in wine & warm spices

  • 3 lb
    chicken, cut in serving pieces
  • 2 Tbsp
    butter
  • 2 Tbsp
    olive oil
  • 1 c
    onion, chopped
  • 1 c
    diced tomatoes, canned
  • 4 Tbsp
    tomato paste
  • 1/4 Tbsp
    dry red wine (not cooking wine)
  • 1 clove
    garlic, crushed
  • 1/4 tsp
    allspice
  • 1/2 tsp
    cinnamon
  • 1/4 c
    chicken broth

How To Make slow cooked chicken in wine & warm spices

    Using a heavy bottomed skillet or cast iron skillet, heat butter and olive oil. Brown chicken until golden all over; then remove from pan.

    Reserving 1 tbsp. of the oil/butter mixture, saute onion until golden; then add the tomatoes, tomato paste, wine, garlic, spices and broth. Stir to incorporate the ingredients and bring to a simmer.

    Add the chicken back to the skillet and turn heat to low; cover and simmer for approx. 30 minutes. Uncover chicken and simmer for another 30 minutes.
