Ingredients For skillet chicken and scallion stir fry

1-1/2 bunchscallions, cut into 2" pieces

1 lbboneless, skinless chicken breasts, cut into thin strips

3 Tbspcornstarch, divided

3 Tbsplight soy sauce

2 Tbspcanola oil
-
1 tspsesame oil

1red bell pepper, thinly sliced

1 clow-sodium chicken broth
-
2 Tbsprice wine vinegar
-
1/2 tspcrushed red pepper flakes

1scallion, chopped for garnish
How To Make skillet chicken and scallion stir fry

1In lg bowl place 1-1/2 bunches scallions and chicken strips. Sprinkle w/ 2 tbsp cornstarch and soy sauce. Toss to coat.

2In lg wok or skillet, heat oils over med-high heat. Add chicken, scallions and red pepper. In 2 batches, saute each batch for 3 mins.

3In bowl, whisk together broth, vinegar, crushed red pepper flakes and remaining cornstarch. Add to chicken mix, bring to a boil. Cook, stirring until thickened. Top w/ extra scallion.
