This is another of grandma's dishes. It doesn't get any easier than this; quick to make with excellent results. The flavorful chicken is crispy on the outside and tender and juicy inside. If you try it, you will not be disappointed.

Ingredients For simple simon chicken

  • 1 c
    cracker crumbs (Ritz or preferred crackers)
  • 1/4 c
    Parmesan cheese, finely grated
  • 1/2 tsp
    dry mustard
  • 2 clove
    garlic, finely chopped
  • 1
    shallot, finely chopped
  • 1/2 tsp
    fine sea salt
  • 1/2 tsp
    sweet paprika
  • 1/4 - 1/2 tsp
    cayenne pepper, more if you like heat
  • 1
    whole chicken, cut up into 8 pieces
  • 1/4 c
    vegetable oil

How To Make simple simon chicken

    Preheat your oven to 375°F. Cover a baking sheet with tinfoil for easy cleanup.

    In a large bowl, add the following ingredients and mix well; cracker crumbs, Parmesan cheese, dry mustard, garlic, shallot, salt, paprika and cayenne pepper.

    Lightly brush the chicken with oil and roll in the cracker mixture, coating well.

    Place on prepared pan and bake at for 1 hour or until done. Equally good served cold as it is hot.
