This was just an idea for something fun to do with broccoli slaw back when it first came out. I've been making it ever since and the family loves it!

Ingredients For simple chicken lo mein

1-2 Tbsppeanut oil

4boneless, skinless chicken thighs, trimmed of fat and cut into thin strips

3 clovegarlic, minced

2 Tbspfresh ginger root, minced

1 bag1/2 (16 oz.) fresh broccoli slaw or asian style chopped salad mix
-
1 pkg(16 oz) chinese noodles cooked and rinsed under cold water
- FOR SAUCE

1/4 csoy sauce
-
1/4 cchinese rice wine
-
2 Tbspdark sesame oil

1/4 cbrown sugar, loosely packed
How To Make simple chicken lo mein

1Mix together rice wine, soy sauce, garlic, ginger, brown sugar and sesame oil. Set Aside.

2Cook Chinese noodles according to package directions. Rinse with cold water. Set aside

3Heat peanut oil in a large wok or deep skillet over medium-high heat until hot. Add chicken and cook, stirring frequently, until no longer pink. Add vegetables and lid. Cook until vegetables are cooked crisp tender.

4Pour sauce mixture over chicken and vegetables, add noodles and toss to mix and heat through.
