Easy sheet pan dinner with chicken, potatoes, and tomatoes. You can use thighs or drumsticks or a combination. Use a sheet pan with high sides. Prep time does not include marinating time.

  • MARINADE
  • 1/2 c
    lemon juice
  • 6 clove
    garlic, minced
  • 1 Tbsp
    sugar
  • 1 Tbsp
    dried oregano
  • 1 1/2 tsp
    sweet mild paprika
  • 2 lb
    bone in, skin on chicken thighs
  • BAKE
  • 5 sm
    red potatoes, cut into 1” cubes
  • 2 sm
    red onions, quartered
  • 1 c
    chicken broth
  • 8 oz
    whole cherry tomatoes
  • 1/2 tsp
    each salt and pepper
  • 1 Tbsp
    olive oil

How To Make sheet pan mediterranean chicken dinner

    Whisk marinade ingredients together in a bowl. Place chicken in a large ziplock type bag and marinade a few hours (or overnight) in refrigerator.

    Preheat oven to 350F.

    Coat a high sided baking sheet with nonstick spray. Place potatoes and onions in pan. Top with chicken pieces. Pour over the stock and marinade.

    Bake 20 minutes. Remove pan from oven.

    Place tomatoes around chicken and drizzle everything with olive oil. Sprinkle with salt and pepper. Bake another 30-35 minutes until chicken is done and potatoes are cooked.

    Serve chicken and vegetables with pan juices.
