1/2 clemon juice

6 clovegarlic, minced

1 Tbspdried oregano

1 1/2 tspsweet mild paprika

2 lbbone in, skin on chicken thighs
- BAKE

5 smred potatoes, cut into 1” cubes

2 smred onions, quartered

1 cchicken broth
-
8 ozwhole cherry tomatoes

1/2 tspeach salt and pepper

1 Tbspolive oil
How To Make sheet pan mediterranean chicken dinner

1Whisk marinade ingredients together in a bowl. Place chicken in a large ziplock type bag and marinade a few hours (or overnight) in refrigerator.

2Preheat oven to 350F.

3Coat a high sided baking sheet with nonstick spray. Place potatoes and onions in pan. Top with chicken pieces. Pour over the stock and marinade.

4Bake 20 minutes. Remove pan from oven.

5Place tomatoes around chicken and drizzle everything with olive oil. Sprinkle with salt and pepper. Bake another 30-35 minutes until chicken is done and potatoes are cooked.

6Serve chicken and vegetables with pan juices.
