1 1/2 lbboneless chicken thighs cut into bite size pieces

2eggs beaten

1/2 cflour

1/2 ccornstarch

- FOR THE SAUCE

2 clovegarlic minced

1 tspolive oil

1/4 choney
-
1/3 csoy sauce

1/2 cketchup

4 Tbspdark brown sugar

2 Tbsprice vinegar

1 tsptoasted sesame oil

2 tspcornstarch

1 Tbspblack and white sesame seeds
- FOR THE CAULIFLOWER RICE

1/2head cauliflower shredded in a food processor.

How To Make sesame chicken with cauliflower rice

1For the Chicken Place the eggs salt, and pepper in a shallow dish mix well.

2Place the flour and cornstarch in a shallow dish and mix. Dip each piece of chicken in the egg mixture then dredge in the flour mixture. Place in a single layer on a baking pan. Set in the fridge for 1 hour.

3Heat the peanut oil to 350 degrees. Working in small batches cook the chicken about 5 minutes in the hot oil. Remove with slotted spoon and place on paper towel lined plate to drain. Repeat until all chicken is done.

4For the Sauce. Mix the honey, soy, ketchup, dark brown sugar, rice vinegar, sesame oil and cornstarch in a bowl. Mix well. Place the oil in a saucepan. Add the garlic and cook 30 seconds. Add the honey mixture and cook 3 to 4 minutes until hot and thickened. Mix the chicken into the sauce. Sprinkle with sesame seeds..

5For the Cauliflower rice Place the oil in a large skillet. Add the cauliflower rice and salt and cook for 2 or 3 minutes just until hot.

6For the dish Place cauliflower rice on a plate. Top with the sesame chicken.
