This is inspired by another recipe from a recipe book put out by Costco®. I'm trying to cut down on carbs and this seemed like a yummy way to do so!

Ingredients For sesame chicken and melon

2 Tbspvegetable or peanut oil

4chicken breasts, boneless and skinless, cut into chunks

1 Tbspsoy sauce

2 Tbspmirin
-
6 clovegarlic, thinly sliced

1 Tbspginger, minced fresh

2 bunchgreen onions, chopped

1/2 ctoasted sesame seeds

4 ccantaloupe, diced
How To Make sesame chicken and melon

1Heat oil in wok over high heat. Add chicken and stir-fry until they begin to get brown.

2Reduce heat to medium. Add soy sauce, mirin, garlic and ginger. Stir-fry until most of liquid is gone.

3Add green onions and sesame seeds. Sauté until chicken is done.

4Arrange melon on 4-6 plates and top with chicken.
