This happens to be one of my husband Anthony's favorite meals. I didn't have a recipe for Chicken Parmesan and found this in a Penzey's Spice Magazine last year in 2010. It is an incredible recipe and my husband loves it. Now, since I've been working with this recipe I have changed some things, added more sauce and adjusted it to our liking. One process you want to get for sure is the chicken is to be fried to make a crispy coating before baking in the oven. This is a very flavorful meal and feel free to use you own favorite marinara sauce with it.

Ingredients For chicken parmesan

  • MALLET CHICKEN:
  • 4 md
    boneless, skinless chicken breasts (6 oz. of chicken each) this is a 1 1/2 pds
  • 2 - 4 sheet
    wax paper
  • DIP FIRST IN:
  • 1/2 c
    flour
  • DIP SECOND IN:
  • 2 md
    eggs, lightly beaten
  • 1/4 c
    buttermilk
  • DIP THIRD IN BREADING:
  • 1 1/2 c
    panko bread crumbs
  • 1/4 c
    parmesan & romano cheese
  • 1 tsp
    italian seasoning
  • 1 Tbsp
    oregano, dried
  • 1 Tbsp
    basil, dried
  • 1 tsp
    cayenne pepper
  • FRY CHICKEN IN PAN:
  • 1/3 c
    olive oil
  • add breaded chicken breasts to pan
  • GLASS BAKING DISH:
  • 32 oz
    jar marinara sauce, divided
  • 1 1/2 c
    grated mozzarella cheese
  • 1/4 c
    parmesan & romano, shredded
  • COOK PASTA WHILE CHICKEN IS IN OVEN:
  • 8 oz
    linguine, cooked or spaghetti
  • salt and pepper

How To Make chicken parmesan

    Preheat oven to 375 degrees. Place the chicken breasts between 2 pieces of waxed paper and pound until they are about 1/2 inch thick. Salt & pepper your chicken once thinned out. 3 bowls: 1- with flour 2-with eggs and buttermilk whisk well 3- with bread crumbs, spices, 1/4 cup of the Parmesan cheese, Oregano, Basil and Cayenne Pepper mix together. 4 PLATE --- to put your coated chicken on.

    Heat the oil in a large frying pan over medium heat or use an electric skillet set to 350 degrees. Carefully, add the chicken to the pan.

    Cook until golden brown on each side and place on a plate till finished frying them up. They will finish cooking in the oven.

    Spread 1 cup of the marinara sauce in the bottom of a glass baking dish. Place the chicken in the dish and top with the remaining marinara sauce.

    Sprinkle the mozzarella cheese and other cheeses on top of chicken.

    Bake at 375 degrees for 20 minutes or until the cheese is bubbly. While the chicken is baking, cook the pasta according to package directions.

    1-1-13 New Year's Day Dinner ---- I doubled the recipe for our meal and cooked the chicken up in my electric skillet instead. I served it w/over spaghetti, serve with a salad, and my vegetable strata instead of bread.
