saucy salsa chicken and rice

this is something i came up with browsing through other recipes and my cabinets. it turned out great and already have a few changes in mind for next time! oh, and i had a bag of Frito's, you know the bottom of the bag no one eats, so i crushed them and topped the dish with these, wonderful!

Ingredients For saucy salsa chicken and rice

1 pkgchicken breast halves, skinless and boneless

1 pkgtaco seasoning mix (i used cheesy flavor)

cumin
-
paprika
-
basil and garlic mix (mccormick)

salt and pepper

1 canchicken broth
-
1 jarsalsa, chunky
-
1 canblack beans, drain
-
1 cankernel corn,drained
-
2 crice
-
shredded cheese (i used monterey jack mixture)
- CUT CHICEN INTO BITE SIZE PEICES, PLACE IN A BOWL OR ZIP BAG, COAT WITH TACO SEAS AND OTHER SPICES(TO TASTE) REFRIGERATE 30 MIN OR LONGER.
How To Make saucy salsa chicken and rice

1coat fry pan with olive oil, pan should be hot! add chicken saute until slight "crust" forms. add chicken broth, let simmer about 15 min. meanwhile cook rice according to package, set aside.

2add salsa and beans to chicken mixture, continue simmering another 10 min. add rice and corn, reduce heat to low, let flavors "marry".

3you can add the cheese just before serving or to each individual plate, as i did. hope you give it a try!
