Ingredients For saucy chicken & asparagus

  • 1 1/2 lb
    fresh asparagus spears-halved
  • 4
    boneless skinless chicken breast halves
  • 2 Tbsp
    cooking oil (canola or olive)
  • 1/2 tsp
    salt
  • 1/4 tsp
    pepper
  • 1 can
    cream of chicken soup (undiluted)
  • 1/2 c
    mayonaisse (or miracle whip)
  • 1 tsp
    lemon juice
  • 1/2 tsp
    curry powder
  • 1 c
    shredded cheddar cheese

How To Make saucy chicken & asparagus

    If desired partially cook asparagus,drain. Place asparagus in the bottom of a greased 9" square baking pan.

    In a skillet,over medium heat,brown the chicken in oil on both sides.Season with salt & pepper. Arrange chicken over asparagus.

    In a bowl,mix soup,mayo,lemon juice & curry powder. Pour over chicken.

    Cover & bake in a preheated 375 degree oven..40 minutes or until chicken is tender and juices run clear....Sprinkle with cheese....Let stand 5 minutes before serving.
