No two gumbos are ever the same! But when there's a recipe to follow it can get pretty close sometimes... ;) This recipe is also from my grandmother-in-law.

Ingredients For sam's chicken gumbo

  • 8
    chicken thighs, skinless and boneless
  • 2 links
    sausage, smoked, all meat
  • 3 sm
    onions, chopped
  • 2 stalk
    celery, chopped
  • 1 can
    cream of chicken soup
  • 1/2
    green bell pepper, chopped
  • 1/2 tsp
    ground thyme
  • dry roux mix
  • 1 c
    okra, chopped or sliced
  • salt to taste
  • black pepper to taste
  • extra chicken broth (optional)

How To Make sam's chicken gumbo

  • 1
    Boil chicken with 1/2 of the onions, celery and bell pepper.

    When almost done, remove chicken from broth and cut into bite-sized pieces.

    Slice sausage and brown.
  • 4
    When sausage is browned, all remaining onions, celery and bell pepper; saute'.

    Add chicken and stir to blend flavors, then put everything back into the broth and add thyme.

    Cook long enough for flavors to thoroughly blend. Add roux mix to thicken to taste.

    Add okra at the end, just long enough for it to get tender.

    If desired add extra broth.

    Serve over rice.
