No two gumbos are ever the same! But when there's a recipe to follow it can get pretty close sometimes... ;) This recipe is also from my grandmother-in-law.

Ingredients For sam's chicken gumbo

8chicken thighs, skinless and boneless

2 linkssausage, smoked, all meat

3 smonions, chopped

2 stalkcelery, chopped
-
1 cancream of chicken soup

1/2green bell pepper, chopped
-
1/2 tspground thyme
-
dry roux mix
-
1 cokra, chopped or sliced

salt to taste
-
black pepper to taste
-
extra chicken broth (optional)
How To Make sam's chicken gumbo

1Boil chicken with 1/2 of the onions, celery and bell pepper.

2When almost done, remove chicken from broth and cut into bite-sized pieces.

3Slice sausage and brown.

4When sausage is browned, all remaining onions, celery and bell pepper; saute'.

5Add chicken and stir to blend flavors, then put everything back into the broth and add thyme.

6Cook long enough for flavors to thoroughly blend. Add roux mix to thicken to taste.

7Add okra at the end, just long enough for it to get tender.

8If desired add extra broth.

9Serve over rice.
