My friend and I had wanted to try a few new indian recipes we hadn't tried before, and this was one of our favorites. This creamy spinach sauce can be made with mixed vegtables,paneer, shrimp, lamb, fish, it doesn't have to be chicken. Its also very good just to dip naan in

Ingredients For saag chicken

3 lbchicken pieces skinned

5 clovegarlic minced

2 lgonions diced

2 lgtomatoes crushed

1"piece of ginger minced

4 Tbspmilk
-
4 bunchspinach washed and chopped

2 Tbspbutter
-
1/2 tspcayenne
-
1 tspcorriander powder
-
1/2 tspturmeric, ground

2 lgcardamon pods
-
2cloves
-
7 Tbspvegtable oil
-
1 tspgaram masala
-
1/2 tspsalt
How To Make saag chicken

1fry chicken in 4 tbs oil for 3-4 minutes, until lightly browned, set aside.

2put the spinach in a deep pan, add 1/4 cup water bring to boil and remove from heat. Let cool, when cool , grind in blender and set aside.

3heat remaining oil add ginger, garlic, onions saute till lightly browned. Add tomatoes, salt, cayenne, corriander, turmeric,cloves and cardomom.

4Sprinkle with 1 tablespoon of water, cook for 10 minutes over low heat.

5Add chicken and milk, simmer until the chicken is tender.

6Add spinach and garam masala.

7Cook until spinach starts sticking to the pan. Remove from heat.

8Add butter and cover until ready to serve.
