How To Make rustic french roast chicken with vegetables

1Preheat oven to 325 degrees

2Combine all the herbs and spices with the butter.

3Remove giblets, rinse and dry the chicken.
Rub the butter mixture under the skin of the chicken. -
4Chunk all the vegetables and place in the bottom of a cast iron (Le Creuset type) stew pot.
Place chicken on top of the vegetables. -
5Place in oven and roast for 2 1/2 to 3 hours.
If time is an issue increase oven temp. to 375 degrees and roast for 1 1/2 to 2 hours. - Last Step: Don't forget to share!
