robynne's spaghetti with meat sauce
My oldest son says if he had to pick one meal, and was forced to eat it everyday of his life, he would pick my spaghetti. LOL I hope he never has to do it, but it sure is music to a mom's ears. I have never had a recipe for my spaghetti, it just evolved over the years. My best friend is Italian and makes her sauce the authentic way she grew up eating, but every now and then, she craves my spaghetti. Shhh! It can be our little secret *grin* Disclaimer: I have always used recipes as a guide and use my instincts and experience to alter or omit ingredients as I cook. Therefore, it has always been a challenge when sharing recipes with others. I doubt I make dishes the same way twice. So, I advise you to use my recipes the same way. Ingredients For robynne's spaghetti with meat sauce

1 mdonion, chopped

1-2 Tbspolive oil

6 clovegarlic, more or less to taste

2 lbground beef ( you can substitute 1 pound ground italian sausage, for 1 pound of beef)

3-4chicken breasts, boneless and skinless

2 tspgarlic salt

1/2 tspblack pepper
-
28 oztomato puree
-
29 oztomato sauce
-
14 1/2 ozdiced tomatoes
-
1 tspgranulated garlic
-
2 tspitalian seasoning
-
2 tsporegano
-
3/4 tspbasil
-
1 tspthyme
-
2bay leaves
-
1/2 tspfennel seeds
-
1/2 cred wine
-
1 Tbspparsley
-
salt & pepper, to taste
How To Make robynne's spaghetti with meat sauce

1In a large pot, cook beef/sausage over medium heat until meat is no longer pink; drain. In a small skillet, heat olive oil and saute onions and 6 cloves minced garlic until onion begins to brown. Add to pot with ground beef.

2Add tomatoes, garlic salt, black pepper, granulated garlic, italian seasoning, oregano, basil, thyme, bay leaves and fennel to the pot.

3In a medium pot, boil chicken breasts until no longer pink. Rinse in cold water. When cool enough to handle, pull the chicken breast apart in pieces and add to pot with the rest of the ingredients.

4Simmer for 1-2 hours, stirring occasionally. Add wine, parsley and more salt, pepper and garlic if needed. Simmer for 30 minutes or longer if time permits. Remove bay leaves when ready to serve.

5Prepare spaghetti following package directions. Top with fresh grated Parmesan cheese.

6I serve with salad and my cheesy garlic bread (See recipe below). Enjoy!

7Robynne's Cheesy Garlic Bread: 1 large loaf of french bread, cut in half lengthwise. 2 sticks of butter, softened. 3-6 cloves minced garlic 2 cups shredded sharp cheddar (mozzarella can be substituted or use both =) 1 tablespoon parsley Combine butter, garlic and parsley in a bowl. Place bread on baking sheet and spread butter mixture on bread. Top with cheese(s) Broil in oven until cheese is bubbly and begins to brown. Slice in serving size pieces.
