I try to make roasted chicken at least once a week. It's cheaper, because you almost always have left-overs you can use for other recipes. I like the mild orangy taste to this chicken. And it's VERY moist.

Ingredients For roasted marmalade chicken

2 Tbsporange juice

1 tsporange zest, or peel

3 Tbspchicken broth

3 Tbsporange marmalade

5 tspminced garlic

4celery stalks, chopped.

1 lgred onion, cut into wedges.

1 lbsmall red potatoes, halved.

8 ozbaby carrots.

1 tspdried thyme

1 tspdried rosemary

2 Tbspolive oil.

How To Make roasted marmalade chicken

1Heat oven to 350. In bowl, combine orange juice, orange peel, broth and marmalade, season w/ salt and pepper. In lg roasting pan, toss next 7 ingredients w/ oil Place chicen over veggies. Coat chicken w/ marmalade glaze. Roast chicken and veggies about 2 hrs, or until no longer pink inside.
