A simple, but oh so delectable chicken. Serve w/ a stuffing w/ chopped scallion. I made this last night w/ a 5 lb chicken and cooked it for 20 mins longer, it came out super moist.

Ingredients For roasted herb-lemon chicken

  • 2 tsp
    dried italian herbs
  • 1/2 tsp
    each salt and pepper
  • 1/2 tsp
    dry mustard
  • 1 tsp
    garlic powder
  • 1
    shallot bulb, sliced into slivers
  • 1
    3-5 lb whole chicken roaster
  • 2
    lemons
  • 2 Tbsp
    olive oil

How To Make roasted herb-lemon chicken

    Heat oven to 350. In small bowl, combine italian seasoning, salt, pepper, mustard and garlic powder. Rinse chicken, pat dry. Remove any innards.

    Place chicken in a baking pan. Sprinkle 1-1/2 tsp herb mix inside chicken. Rub remaining herbs over outside of chicken. Squeeze the lemon into a small bowl, add oil, whisk.

    Drizzle oil mix over chicken. Bake 1-1/2 hrs, or until juices run clear, basting occasionally.
