How To Make roast chicken with mushroom rice stuffing

  • 1
First make the stuffing. Add olive oil to a sauce pan. Add the shallots and garlic. Cook until translucent. Add the mushrooms and cook until the mushrooms give up their moisture. Add the wine and cook until most has evaporated. Salt and pepper to taste.
  • 2
Transfer the mushrooms to a food processor and add the cheese, breadcrumbs, and fresh herbs. Process into a thick paste. Remove and stir in the rice. Set aside.
  • 3
Preheat oven to 400 degrees F. Get a roaster and add the chicken broth in the bottom of the roaster.
  • 4
Drizzle the olive oil over the chicken and season with the salt, pepper and paprika. Add the stuffing to the inside of the chicken.
  • 5
Cover the chicken with foil and place in the oven. Bake for 1 hour. Remove the foil and bake another 20 minutes or so, until the internal temp reaches 165 degrees F.
  • 6
Remove from the oven and let rest 15 minutes. Remove the stuffing, carve the chicken, and serve.
