Ingredients For red wine chicken stew

  • 8
    chicken thighs
  • 2 lg
    onions chopped
  • 6 clove
    garlic minced
  • 2 c
    chicken stock
  • 1/2 bottle
    red wine good quality
  • 1 c
    mushrooms chopped
  • 3
    carrots sliced
  • 6 oz
    tomato paste
  • 2
    bay leaves
  • 2 sprig
    each rosemary and thyme
  • 1/2 c
    fresh parsley chopped
  • 2 Tbsp
    oil
  • salt and pepper to taste

How To Make red wine chicken stew

  • 1
    Add oil to large skillet fry chicken until golden in batches remove from pan. Add onions and garlic and saute until softened. Add chicken back to pan.

    Add remaining ingredients and bring to a boil. Reduce to a simmer and simmer 1 hour.

    Remove bay leaves and sprigs of thyme and rosemary. Serve over mashed potatoes, rice or noodles
