Cooking for two can be challenging, but this recipe lets you get a small dinner on the table in a snap. This ranch chicken and potatoes casserole has a classic combination of bacon, ranch, and cheese. Once cooked, the chunks of potatoes are tender. Chicken breasts make this casserole a complete meal. There's ranch and bacon in every bite. A hearty weeknight dinner for two people. If you have a family, the recipe can easily be doubled.

Ingredients For ranch chicken and potatoes casserole for 2

  • 1 lg
    chicken breast
  • 2 lg
    potatoes
  • 1 sm
    onion, diced
  • 10 slice
    bacon, cooked
  • 3/4 c
    ranch dressing
  • 1 c
    shredded cheddar cheese
  • 1 dash
    salt and pepper

How To Make ranch chicken and potatoes casserole for 2

  • Diced potatoes on a cutting board.

    Peel and dice potatoes. Boil for 5 minutes.
  • Cooking diced chicken.

    Dice chicken. Saute for 5 minutes.
  • Cooking chopped bacon.

    Chop bacon into small pieces and cook until crisp.
  • Potatoes, ranch dressing, chicken, bacon, and half the cheese in a bowl.

    Add all ingredients, except 1/2 of cheese, into a mixing bowl. Coat with the ranch dressing.
  • Mixture poured into a baking dish.

    Transfer to a 9" casserole dish.
  • Baking the casserole.

    Bake at 350 for 45 minutes.
  • The remaining cheese added to the casserole.

    Add cheese on top of the casserole dish for the last 5 minutes. Serve with French bread. I have made this dish with leftover boneless rib pieces as well. It is excellent.
