A flavorful and easy salad to throw together for a summer cookout or simple meal. This ramen chicken salad has a sweet, savory, and tangy homemade dressing with an Asian flair. Toasted ramen noodles and almonds add depth of flavor and a nice crunch. Adding chicken to the coleslaw salad adds heartiness. We sprinkled some extra sesame seeds over the top before serving.

- DRESSING

1/2 cextra virgin olive oil

1/4 cseasoned rice vinegar

1/4 cgranulated sugar

2-3 Tbspsesame oil

1 Tbspsoy sauce

1/2 tsppepper
- SALAD

1 Tbspbutter
-
1 pkgramen with seasoning packet
-
1 pkgslivered almonds (2.25 oz)

2-3 Tbspsesame seeds
-
16 ozcoleslaw mix
-
1/2 lgcarrot, peeled and julienned
-
4 - 5 stalkgreen onions; finely chopped

1/4 bunchcilantro, chopped
-
1 lbchicken, gently boiled and finely shredded

Use rotisserie chicken for a shortcut.

1Dressing: Make ahead of time. Combine ingredients in a bottle. Shake very well until sugar dissolves and refrigerate for 2-3 hours.

2Break up the noodles and save the seasoning packet. Set aside.

3Melt butter in a skillet.

4Add ramen noodles, sesame seeds, and almonds. Sprinkle 1/2 of the seasoning packet over the top. Cook until everything is toasted and golden brown. Set aside and let cool.

5In a large mixing bowl, toss together the cabbage, green onions, cilantro, and carrots.

6Toss in the chicken.

7Toss in the cooled ramen mixture.

8Shake the salad dressing. Just before serving, add the dressing and toss.
