A flavorful and easy salad to throw together for a summer cookout or simple meal. This ramen chicken salad has a sweet, savory, and tangy homemade dressing with an Asian flair. Toasted ramen noodles and almonds add depth of flavor and a nice crunch. Adding chicken to the coleslaw salad adds heartiness. We sprinkled some extra sesame seeds over the top before serving.

Ingredients For ramen chinese chicken salad

  • DRESSING
  • 1/2 c
    extra virgin olive oil
  • 1/4 c
    seasoned rice vinegar
  • 1/4 c
    granulated sugar
  • 2-3 Tbsp
    sesame oil
  • 1 Tbsp
    soy sauce
  • 1/2 tsp
    pepper
  • SALAD
  • 1 Tbsp
    butter
  • 1 pkg
    ramen with seasoning packet
  • 1 pkg
    slivered almonds (2.25 oz)
  • 2-3 Tbsp
    sesame seeds
  • 16 oz
    coleslaw mix
  • 1/2 lg
    carrot, peeled and julienned
  • 4 - 5 stalk
    green onions; finely chopped
  • 1/4 bunch
    cilantro, chopped
  • 1 lb
    chicken, gently boiled and finely shredded

Use rotisserie chicken for a shortcut.
  • Combine dressing ingredients and let sit for 2 - 3 hours.

    Dressing: Make ahead of time. Combine ingredients in a bottle. Shake very well until sugar dissolves and refrigerate for 2-3 hours.
  • Break up the ramen noodles.

    Break up the noodles and save the seasoning packet. Set aside.
  • Melt butter in a skillet.

  • Add ramen noodles, sesame seeds, almonds, and half of the seasoning package.

    Add ramen noodles, sesame seeds, and almonds. Sprinkle 1/2 of the seasoning packet over the top. Cook until everything is toasted and golden brown. Set aside and let cool.
  • Cabbage, green onions, cilantro, and carrots in a bowl.

    In a large mixing bowl, toss together the cabbage, green onions, cilantro, and carrots.
  • Toss in the chicken.

  • Toss in the ramen mixture.
