I was looking for a good, healthy chicken chili recipe and after browsing several online, I took what I liked out of the ones I liked and made up my own. 1 cup of chili = 137 calories, 2.38g fat, 19.93g carbs, 11.99g protein.

Ingredients For crockpot rainbow chicken chili

2boneless, skinless chicken breasts, (approx 14 oz of meat) thawed

3 canwhite beans
-
1 canbush's seasoned black beans

1 canrotel original medium diced tomatoes and chilis

1 smonion, diced
-
4 cloveminced garlic
-
1 mdgreen bell pepper, diced

1 mdyellow bell pepper, diced

1 mdred bell pepper, diced

1 mdorange bell pepper, diced

2seeded and diced jalapenos
-
2 Tbspground cumin
-
1 Tbspancho chili powder
-
2 tspground black pepper

2 tspkosher salt
-
1 tspdried ground oregano
-
1/2 pkghidden valley ranch dressing mix

4 ozneufchatel cheese
-
1 cchicken broth
-
chopped cilantro and green onion for garnish
How To Make crockpot rainbow chicken chili

1Add all diced and minced veggies to crock pot.

2Add spices and mix.

3Add Chicken to crock pot.

4Add chicken broth to crock pot and top with cream cheese.

5Cook on HIGH for 5-6 hours, stirring occasionally.

6Remove chicken breasts and shred with two forks then add back to chili.

7Serve with cilantro and green onion garnish. Enjoy!
