Great quick recipe for left over chicken. You can use any vegetables you have on hand so the recipe can always be unique. You can use fresh chicken just cook it with the vegetables.

4 ozrice noodles

1 Tbsppeanut oil

6 ozshiitake mushrooms

1/2red onion diced

1/2head red cabbage diced

4 clovegarlic minced

1 Tbspginger minced

3scallions diced

1 crotisserie chicken diced

1 jarmongolian sauce i used pf changs brand

How To Make quick & easy mongolian chicken stir fry

1Cook the rice noodles according to package directions. Drain and set aside.

2Add oil to large skillet. Add the red onion, red cabbage, green onions, garlic, mushrooms and ginger. Stir fry for 3 minutes. Add the chicken rice noodles and Mongolian sauce. Cook stirring until everything is well incorporated. Garnish with cilantro.
