Ingredients For quick chicken with pomodoro sauce

  • 2 clove
    garlic, pressed or finely minced
  • 2
    boneless, skinless chicken breasts - each sliced in half to make 4 thinner breasts
  • 1/8-1/4 tsp
    red pepper flakes
  • 1 Tbsp
    olive oil
  • 1 can
    14.5 oz. stewed tomatoes
  • 2 sm
    zucchini, cut in half lengthwise and sliced crosswise
  • 2 Tbsp
    fresh basil leaves, sliced thinly (or 1/2 tsp. dried basil)
  • 1/3 c
    whipping cream

How To Make quick chicken with pomodoro sauce

  • 1
    Sprinkle/rub chicken breasts with garlic and crushed red pepper - sprinkle with salt and pepper.

    Add 1 tbsp. oil to skillet and brown chicken over medium-high heat.

    Add tomatoes, zucchini and basil. Cook, uncovered, over medium heat for approx. 15 minutes or until sauce is thickened and chicken is cooked through. Stir occasionally.

    Lower heat and add cream just to heat through (do not boil).
