This is one I have used for a while now, for when you need something quick. Always good to have some frozen chicken breasts around! It's also a good make-ahead dish. I'll take a photo next time I make it.

Ingredients For quick chicken in white wine sauce

2chieck breasts

1 smonion, chopped

1/2 cwhite wine

1/2 tspthyme, dried

1/4 tspblack pepper

1 clovefresh garlic, minced

1 Tbspflour
-
1 Tbspparsley (fresh if available)

4 ozsliced mushrooms

1/4 colive oil
How To Make quick chicken in white wine sauce

1Heat 1/4 cup of oil in a skillet, add chicken breasts and brown uniformly. Remove the chicken to a nearby plate and reserve the pan oil.

2In a shaker or jar, combine the wine, pan oil, flour , thyme, pepper and minced garlic. Give this a good shake.

3Combine the chicken, shaker contents and chopped onion in the pan and simmer for 1/2 hour. This will be very fragrant.

4Add the mushrooms ten minutes later. Serve over rice of your choice.
