I got this casserole from the school secretary who had four teenage sons.She told me that they loved it so I tried it! My family absolutely loved it especially my son!! He actually named it the Dish. I made the name up for the recipe to put on JAP but my family knows it as the Dish. Sometimes we will be wondering what to have for dinner and my husband always will say, "What about the Dish." I have given this recipe to many family members and they love it.

Ingredients For quick chicken fiesta casserole

  • 1 10 oz can
    white chcken breast or 2 small cans
  • 1 10 oz can
    rotel tomatoes and chilies
  • 2 can
    cream of chicken soup
  • 1 15 oz can
    mexican style chili beans
  • 1 pkg
    grated sharp cheddar cheese
  • 1-2 c
    shredded or torn iceberg lettuce
  • 1 c
    chopped tomatoe
  • 1 pkg
    fritoes (not the dip kind)

How To Make quick chicken fiesta casserole

    In a saucepan heat cans of chicken breasts,Rotel tomatoes and chilies, cream of chicken soup, and let come to a slow boil. Turn off heat.

    In a casserole dish spray the bottom and sides. Pour in Frito's (you may want to use most of the bag except a handful or so). Pour the chicken mixture over the top covering the Frito's. Cover with grated cheese. Bake at 350 degrees for 30 mins or until it becomes bubbly and not soupy any longer.When taken out of the oven let stand a few minutes before serving. Heat Chili Beans. Mix lettuce and tomato together.

    Serve the casserole topped with Chili Beans, lettuce and tomato and add some taco sauce on top. This is a great one meal dish and is very easy to do.
